Takenoko (bamboo shoots)

We are fortunate to be able to dig fresh bamboo shoots (takenoko) this spring. It’s amazing how fast they grow. It was a lot more work than I thought it was going to be however, it was worth it.

This time of the year, digging up takenoko is a family event.

We spent the morning digging up the takenoko and the rest of the day we processed it and divided it up for our families and friends.
